Using Australian grown Oats and Hemp Seeds, this morish Banana & Oat Superfood Cookie Mix has a deliciously chewy texture and is the perfect lunch box snack. Because deliciously flavoursome food should never come at the expense of your health.

Developed by nutritionist and author Jacqueline Alwill, Mt. Elephant makes delicious, plant-based ingredients and food that are nourishing and fuelled with goodness.

What you will need:¼ (60ml) cup of oil1 ripe banana, mashed

Method:PREPARE... by preheating the oven to 180°C (fan forced). Line a large tray with greaseproof paper or a silicone baking mat. MIX... the oil and mashed banana in a bowl together. Fold in the dry cookie mix until it’s well combined. Dampen your hands with water, scoop 1.5 tbsp of cookie mix in your hands and roll. Place on a tray and gently press down to 1cm thickness.BAKE... for 15-16 minutes or until the edges are lightly browned.TIP... If your mix is not holding together well in a ball add slightly more oil until they hold together firmly without cracking. 

Wholefood Flour Mix (23%) (Buckwheat (8%), Chickpea (8%), Brown Rice), Oats (21%), Dates (Dates, Rice Flour), Coconut Sugar, Desiccated Coconut (6.5%), Hemp Seeds (5%), Cinnamon (1%), Rice Starch, Baking Powder (450, 500), Natural Vanilla Flavour.
