We love two things here at F&F, one of them is chocolate, the other is cake! So we were particularly excited when our friends from Ulu Hye sent us this recipe! If you're a no-fuss kind of baker and don't have the patience to bake an entire cake—this recipe is for you!
And so... we present... The Vegan Chocolate Lava Cake! Enjoy!
Vegan Chocolate Lava Cake by Ulu Hye
SERVES 1-2
INGREDIENTS
- 1/4 cup chocolate buttons plus 4 extra buttons. You can also break up any chocolate bar.
- 1/4 cup coconut oil or vegan butter
- 1/2 cup Ulu Hye’s Hazelnut Milk
- 1/4 cup flour - we used gluten-free flour
- 1/4 cup chocolate protein powder
- optional - 1 tbsp cacao (depending on how decadent you’d like it...)
- Pinch of salt
DIRECTIONS
- Preheat your oven to 180°C
- Melt the chocolate and oil/butter in a small bowl
- Add mylk and mix well
- Add dry ingredients and stir until smooth
- Pour into a mug or small ceramic bowl like a ramekin
- Add remaining chocolate buttons into the centre of the batter
- Bake for 15 minutes
- Devour as is, or serve with a dollop of nice cream or coconut yoghurt
***Option to cook in a microwave. We just don't have one so couldn't test it out, but you could cook on high for about 60 seconds, depending on your microwave.
