Ingredients
- 4-5 cups of day old rice (this gives a nice texture to the rice if it's cooked the night before)
- 3 cloves of garlic (finely chopped)
- 500g mushrooms (chopped)
- Handfull of fresh spring onion (chopped)
- 3 tbls soy sauce
- 1 cup of frozen vegetables (optional)
- 1 tbls sesame oil (optional)


Steps
- Prepare rice the night before (1.5 cups of uncooked rice turns to 4-5 cups of cooked rice). Once cooked, put in fridge overnight
- Chop garlic, spring onion, and mushrooms
- In a large pan: spray with cooking oil and sauté garlic on low/med heat
- Add spring onions and mushrooms, turn heat up to medium. Cook for 3-5 mins or til mushrooms are cooked. Constantly moving the mushrooms around
- Add rice and vegetables and cook for 2-3 mins (the frozen veggies will thaw under the heat)
- Remove from heat, add 3 table spoons of soy sauce and 1 tablespoon of sesame oil
- Serve and enjoy
