Looking for the perfect winter warmer? Our ambassador Brooke, has dished up a delicious and heartwarming Miso Ramen Vegetable Broth. Follow her recipe below:
Ingredients
- NutraOrganics Vegetable Broth (2 Tbsp)
- Bio Organic Mie-Noodles (2 sections)
- Mt Elephant Hemp & Olive Oil Blend
- Filtered water
- Bok Choy (large bunch)
- Spring onion (several stems)
- Chilli (to taste)
- Garlic (1-2 cloves)
- Lime (1 whole lime juiced plus extra to serve)
- Salt & pepper
- Coriander (to serve)
Method:
- Chop all ingredients.
- In a large pot lightly fry the garlic and spring onion (or brown onion) in some olive oil (I used Mt Elephant Hemp & Olive Oil Blend).
- Add the bok choy stalks and finely sliced chilli. Then add the bok choy leaves shortly after.
- Add several cups of water (enough to cover the vegetables), the vegetable broth, lime juice and salt and pepper to taste.
- Lightly simmer whilst cooking the noodles. Once the noodles are almost ready, transfer them to the broth and heat until they are done.
- Once ready transfer to a bowl and serve with extra lime and chilli.
