Ingredients
- 1 serve (50gms) of Alb-Gold Organic Spelt Mie Noodles
- 1 heaped tablespoon (approximately 6 grams) Nutra Organics Miso Ramen Vegetable Broth Powder
- 20 grams Plantasy Foods Soy Free Vegie Mince
- 1 heaped tablespoon minced garlic
- 1 tablespoon of Chef's Choice Thai Chilli Paste
- 1 tablespoon soy sauce
- 80 grams firm tofu cut into small squares
- Veggies of choice, use what you have available. Monz used shelled edamame, carrot ribbons, red capsicum sliced julienne style, red onion and spring onion.
Method
- Chop up veggies
- Cut tofu into small squares
- Combine all ingredients in a large bowl
- When ready to eat, cover all ingredients with boiling hot water and cover with a lid.
- Leave for 3-5 minutes for the noodles to reach the desired texture
- Enjoy
Note: The Vegie Mince is like textured vegetable protein (TVP) so it will rehydrate and expand with the boiling water. This mince reminds Monz of a 'chickeny' style mince rather than the beef style mince that is common with TVP. So if that makes your tastebuds sing, we defintely think you will enjoy this recipe.
