Do you ever dream of your childhood treats being vegan? Vegan Smarties are here and we've put them in cookies for a doubly delicious treat!
There's a warm feeling that fills our heart when we think of one of our favourite childhood treats; Smarties. Whether you sorted them into colour groups, made pretty designs on a cake or traded your Halloween candy for a mini box of these, we're all a bit sad they're not accidentally vegan!
Thankfully Clarana realised the importance of this classic candy-coated chocolate and made a vegan version for everyone to enjoy. Clarana's vegan chocolate treats are also gluten and palm oil-free and made with all-natural colours which ticks all our boxes.
These cookies are so easy to make and use just 4 ingredients. They are crunchy on the outside, fudgy on the inside, and filled with yummy hazelnut bits. We decorated these cookies with Clarana chocolate buttons, but you could also top them with hazelnuts, chocolate chips, or just leave them plain. Enjoy with a glass of your favourite nut mylk!
Vegan Double Chocolate Smarties Cookies
Makes 10 cookies
Ingredients
1 200g jar Vego Hazelnut Chocolate Spread
¾ cup plain flour
1 tbsp ground flaxseed
3 tbsp water
*Ground flaxseed and water mimics the consistency of an egg and helps to bind the cookies. If you can't find ground flaxseed at the supermarket you can use a Ninja blender or even a coffee grinder to grind your flax seeds.
Method
- Preheat oven to 180°C and line a baking tray with baking paper.
- Mix the ground flaxseed and water and allow it to thicken for 5 minutes.
- Combine the flax mixture and Vego spread, then gently stir in flour.
- Divide dough into 10 balls and place onto the baking tray. Flatten each ball slightly, then decorate with chocolate buttons.
- Bake for 8-10 minutes. The cookies will be very soft when hot but will firm up as they cool down.
A little bit about our resident baker
When Ash isn't busy organising our team in the warehouse she is likely baking up a storm in her kitchen. Pre-coronavirus, Ash blessed us weekly with vegan treats that are on another level. We asked Ash a few questions about her baking skills and favourite recipes. Scroll down for the recipe and get to know our resident baker!
Interview with Ash
I've loved cooking and baking for as long as I can remember, but studying nutrition and food science at uni has made me even more passionate about making (and eating!) food. My best advice would be to start simple - before attempting a five-course meal for 20 friends, build up your skills and confidence with cookies or a tasty pasta dish.
What is your favourite meal ever and have you been able to 'veganize' it?
I love mac and cheese! I first developed my vegan mac and cheese recipe for a uni assessment, and I've lost count of the number of times I've made it since then!
What do your family and friends think of your recipes? Can they tell they are vegan?
They enjoy my vegan recipes. I always tell people that my cooking is vegan, but people often say that they wouldn't be able to tell either way.
